Short pasta, mushrooms and tomatoes in a simple creamy sauce.

## Ingredients

- 180 g short pasta
- 200 g mushrooms, sliced
- 150 g cherry tomatoes, halved
- 100 ml cream
- 1 tbsp olive oil
- 1 handful spinach
- Salt and black pepper

## Method

1. Cook the pasta according to its packet instructions; keep some of the cooking water.
2. Fry the mushrooms in the oil until golden, then add the tomatoes.
3. Add the cream and a splash of pasta water; simmer briefly.
4. Toss in the pasta and spinach, stir until the leaves soften, then season and serve.
